Guacamole is so easy to make, and living in California we have access to some of the freshest, best tasting avocados on earth!Not only is guacamole delicious, it can lower your cholesterol and help regulate blood sugar. And adding the cumin will promote digestion. I like to leave the avocado in big chunks and omit the jalapeños when I’m serving it to my boys. Just add some chopped pepper if you like your Guac on the spicy side.
Simple Easy Guacamole
Ingredients
- 3 avocados
- 2 garlic cloves, crushed
- 2 green scallions chopped (only the white parts)
- handful of cherry tomatoes, quartered
- 1 tsp chopped jalapeno pepper
- ½ lime, juiced
- ½ tsp roasted cumin seeds (grounded)
- pinch sea salt
Instructions
- Remove the flesh of the avocados and place in medium bowl.
- Add the garlic, scallions, lime juice and mash. Gently stir in the tomatoes and pepper.
- Add the salt and stir. Sprinkle the roasted ground cumin on top and serve.
- * Roast the cumin seeds in a pan over medium heat for 3 minutes and grind in a spice grinder.
Enjoy with tortilla chips or with tacos.
